Description

These colorful and fun Rainbow Macarons are perfect for any occasion, topped with edible glitter for an extra touch of excitement.


Ingredients

  • 1 cup almond flour
  • 1 3/4 cups powdered sugar
  • 3 large egg whites
  • 1/4 cup granulated sugar
  • Food coloring (in rainbow colors)
  • Edible glitter (for decoration)
  • A pinch of salt
  • 1/2 cup butter (softened)
  • 1/2 cup powdered sugar (for filling)
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 300°F (150°C) and line your baking sheets with parchment paper.
  2. In a bowl, mix the almond flour and powdered sugar together. Set aside.
  3. In another bowl, beat the egg whites with a pinch of salt. Gradually add the granulated sugar and continue beating until stiff peaks form.
  4. Divide the egg whites into bowls for each color and gently fold in the almond flour mixture with food coloring.
  5. Pipe the colored mixtures onto the prepared baking sheets in circles to form small macarons, and let them sit for 30 minutes.
  6. Bake the macarons for about 15-20 minutes and then let them cool completely.
  7. Mix the softened butter, powdered sugar, and vanilla extract for the filling. Spread between two macarons to make a sandwich.
  8. Sprinkle edible glitter on top for decoration.
