- 1 3/4 cups powdered sugar
- 3 large egg whites
- 1/4 cup granulated sugar
- Food coloring (in rainbow colors)
- Edible glitter (for decoration)
- A pinch of salt
- 1/2 cup butter (softened)
- 1/2 cup powdered sugar (for filling)
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 300°F (150°C) and line your baking sheets with parchment paper.
- In a bowl, mix the almond flour and powdered sugar together. Set aside.
- In another bowl, beat the egg whites with a pinch of salt. Gradually add the granulated sugar and continue beating until stiff peaks form.
- Divide the egg whites into bowls for each color and gently fold in the almond flour mixture with food coloring.
- Pipe the colored mixtures onto the prepared baking sheets in circles to form small macarons, and let them sit for 30 minutes.
- Bake the macarons for about 15-20 minutes and then let them cool completely.
- Mix the softened butter, powdered sugar, and vanilla extract for the filling. Spread between two macarons to make a sandwich.
- Sprinkle edible glitter on top for decoration.
