A delightful cross between fudgy brownies and soft cookies, these Gourmet Brownie Cookies melt in your mouth with a rich chocolate flavor and chewy center.

Ingredients

Scale
  • 1 cup unsalted butter, melted
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 cup cocoa powder
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup chocolate chips

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs one at a time and stir in the vanilla extract.
  4. In another bowl, whisk together the flour, cocoa powder, baking powder, and salt.
  5. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Fold in the chocolate chips.
  7. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  8. Bake for 10–12 minutes, or until cookies are set around the edges but still soft in the center.
  9. Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Serve warm for the best texture. These cookies are great with vanilla ice cream or fresh berries.
