  • 1 cup feta cheese, crumbled
  • 2 cups mixed greens
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • 1 cup Greek yogurt
  • 1 cucumber (grated and drained)
  • 1 garlic clove (minced)
  • 1 tablespoon lemon juice

Instructions

  1. Cook the chicken breast on a grill or stovetop until fully cooked, seasoning with salt and pepper. Let it rest and then slice it.
  2. In a large bowl, combine the cooked quinoa or rice with diced cucumber, cherry tomatoes, red onion, bell pepper, and mixed greens.
  3. In a small bowl, mix the ingredients for the tzatziki sauce: Greek yogurt, grated cucumber, minced garlic, lemon juice, salt, and pepper.
