Description

A healthy and delicious meal combining lean ground turkey and fiber-rich black beans in a crowd-pleasing enchilada.


Ingredients

Scale
  • 1 pound ground turkey
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 cup enchilada sauce
  • 8 corn tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Optional toppings: chopped cilantro, avocado, sour cream

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet over medium heat, cook the ground turkey until browned.
  3. Add black beans, chili powder, cumin, salt, and pepper, stirring to combine.
  4. Spread some of the enchilada sauce in the bottom of a baking dish.
  5. Fill each tortilla with the turkey mixture and roll them up.
  6. Place the tortillas seam side down in the baking dish.
  7. Pour the remaining enchilada sauce over the top and sprinkle with cheese.
  8. Bake for 20-25 minutes or until the cheese is melted and bubbly.
  9. Serve with optional toppings.

Notes

For extra spice, add jalapeños or hot sauce. You can substitute different types of cheese for added flavor.
