Description
A healthy and delicious meal combining lean ground turkey and fiber-rich black beans in a crowd-pleasing enchilada.
Ingredients

- 1 pound ground turkey
- 1 can (15 ounces) black beans, rinsed and drained
- 1 cup enchilada sauce
- 8 corn tortillas
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Optional toppings: chopped cilantro, avocado, sour cream
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet over medium heat, cook the ground turkey until browned.
- Add black beans, chili powder, cumin, salt, and pepper, stirring to combine.
- Spread some of the enchilada sauce in the bottom of a baking dish.
- Fill each tortilla with the turkey mixture and roll them up.
- Place the tortillas seam side down in the baking dish.
- Pour the remaining enchilada sauce over the top and sprinkle with cheese.
- Bake for 20-25 minutes or until the cheese is melted and bubbly.
- Serve with optional toppings.
Notes
For extra spice, add jalapeños or hot sauce. You can substitute different types of cheese for added flavor.
