Description

A hearty and healthy soup combining the comforting taste of soup with bold taco flavors, featuring lean ground turkey, beans, and vegetables.


Ingredients

  • 1 pound ground turkey
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) black beans, rinsed and drained
  • 1 can (15 ounces) corn, drained
  • 1 packet taco seasoning
  • 4 cups chicken broth
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, sour cream, avocado, cilantro

Instructions

  1. In a large pot, brown the ground turkey over medium heat.
  2. Add the chopped onion and minced garlic; cook until the onion is translucent.
  3. Stir in the diced tomatoes, black beans, corn, taco seasoning, and chicken broth.
  4. Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
  5. Season with salt and pepper to taste.
  6. Serve hot with optional toppings as desired.

Notes

For a vegetarian version, replace ground turkey with more beans and use vegetable broth.
