Ingredients

- 1 pound ground turkey
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 can (15 ounces) black beans, rinsed and drained
- 1 can (15 ounces) corn, drained
- 1 packet taco seasoning
- 4 cups chicken broth
- Salt and pepper to taste
- Optional toppings: shredded cheese, sour cream, avocado, cilantro
Instructions
- In a large pot, brown the ground turkey over medium heat.
- Add the chopped onion and minced garlic; cook until the onion is translucent.
- Stir in the diced tomatoes, black beans, corn, taco seasoning, and chicken broth.
- Bring the soup to a boil, then reduce heat and simmer for 20 minutes.
- Season with salt and pepper to taste.
- Serve hot with optional toppings as desired.
Notes
For a vegetarian version, replace ground turkey with more beans and use vegetable broth.
