Ingredients

  • 1 pound ground turkey
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, diced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 1 can (15 ounces) black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 can (14 ounces) diced tomatoes
  • Fresh cilantro for garnish (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Add chopped onion and garlic; sauté until soft.
  3. Stir in the diced bell pepper; cook for another 3-4 minutes.
  4. Add ground turkey, breaking it apart as it cooks until browned.
  5. Sprinkle in cumin, paprika, salt, and pepper; mix well.
  6. Add black beans, corn, and tomatoes; stir to combine.
  7. Let the mixture simmer for about 10 minutes until everything is heated through.
  8. Remove from heat, and garnish with fresh cilantro if desired.

Notes

For a healthier option, use lean ground turkey and feel free to add other vegetables like zucchini or spinach.
