Description

A warm and simple soup with shredded rotisserie chicken, gnocchi, and greens in a light broth, perfect for quick weeknight dinners or cozy lunches.


Ingredients

Scale
  • 1 rotisserie chicken, shredded
  • 1 package gnocchi
  • 4 cups chicken broth
  • 2 cups spinach or kale
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • Salt and pepper to taste
  • 1–2 tablespoons olive oil

Instructions

  1. Heat 1–2 tablespoons olive oil in a large pot over medium heat.
  2. Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until soft, about 5–7 minutes.
  3. Pour in the chicken broth and bring the pot to a boil.
  4. Stir in the gnocchi. Cook according to the package directions until the gnocchi float and are tender.
  5. Add the shredded rotisserie chicken and the spinach or kale. Simmer a few minutes until the greens wilt and the chicken is heated through.
  6. Taste and season with salt and pepper. Serve hot.

Notes

For best texture, store the broth and vegetables separately and add fresh gnocchi when reheating.
