Description
A warm and simple soup with shredded rotisserie chicken, gnocchi, and greens in a light broth, perfect for quick weeknight dinners or cozy lunches.
Ingredients

- 1 rotisserie chicken, shredded
- 1 package gnocchi
- 4 cups chicken broth
- 2 cups spinach or kale
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 cup carrots, diced
- 1 cup celery, diced
- Salt and pepper to taste
- 1–2 tablespoons olive oil
Instructions
- Heat 1–2 tablespoons olive oil in a large pot over medium heat.
- Add the chopped onion, minced garlic, diced carrots, and diced celery. Sauté until soft, about 5–7 minutes.
- Pour in the chicken broth and bring the pot to a boil.
- Stir in the gnocchi. Cook according to the package directions until the gnocchi float and are tender.
- Add the shredded rotisserie chicken and the spinach or kale. Simmer a few minutes until the greens wilt and the chicken is heated through.
- Taste and season with salt and pepper. Serve hot.
Notes
For best texture, store the broth and vegetables separately and add fresh gnocchi when reheating.
