- 1 cup unsalted butter, softened
- 3/4 cup granulated sugar
- 1/4 cup brown sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- Food coloring (red or pink)
- Sprinkles or coarse sugar for decoration (optional)
Instructions
- In a large bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Divide the dough in half. Color one half with red or pink food coloring and mix until uniform.
- Shape each dough half into logs with a diameter of about 2 inches. Wrap in plastic wrap and refrigerate for at least 1 hour or until firm.
- Preheat the oven to 350°F (175°C). Line baking sheets with parchment paper.
- Remove the dough from the refrigerator and slice into 1/4 inch thick rounds. Place on the prepared baking sheets.
- Sprinkle with sprinkles or coarse sugar if desired.
- Bake for 10-12 minutes or until the edges are lightly golden. Let cool on the baking sheets for a few minutes before transferring to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. They can also be frozen for several months if wrapped well.
