Description

A warm, comforting soup that combines tender chicken with colorful vegetables in a flavorful broth.


Ingredients

  • 1 lb chicken breast, diced
  • 4 cups chicken broth
  • 2 cups carrots, diced
  • 1 cup celery, diced
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1 cup green beans, chopped
  • 1 cup peas
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery. Sauté until softened, about 5–7 minutes.
  3. Add the diced chicken. Cook until browned on all sides.
  4. Pour in the chicken broth and bring to a boil.
  5. Lower the heat. Add green beans, peas, thyme, oregano, salt, and pepper.
  6. Simmer about 20 minutes, until chicken is cooked through and vegetables are tender.
  7. Taste and adjust seasoning. Serve warm.

Notes

For added flavor, sprinkle fresh parsley before serving. Accompany with crusty bread or crackers.
