- 1 lb chicken breast, diced
- 4 cups chicken broth
- 2 cups carrots, diced
- 1 cup celery, diced
- 1 cup onion, diced
- 2 cloves garlic, minced
- 1 cup green beans, chopped
- 1 cup peas
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion, garlic, carrots, and celery. Sauté until softened, about 5–7 minutes.
- Add the diced chicken. Cook until browned on all sides.
- Pour in the chicken broth and bring to a boil.
- Lower the heat. Add green beans, peas, thyme, oregano, salt, and pepper.
- Simmer about 20 minutes, until chicken is cooked through and vegetables are tender.
- Taste and adjust seasoning. Serve warm.
Notes
For added flavor, sprinkle fresh parsley before serving. Accompany with crusty bread or crackers.
