- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned
- 1 pound white fish (like cod or haddock), cut into chunks
- 1 onion, chopped
- 3 garlic cloves, minced
- 1 bell pepper, chopped
- 4 cups seafood broth
- 1 can diced tomatoes
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and garlic, cooking until softened.
- Stir in the paprika and thyme, cooking for an additional minute.
- Pour in the seafood broth and diced tomatoes, bringing the mixture to a boil.
- Reduce heat to a simmer, then add the shrimp, mussels, and fish. Cook for about 10-15 minutes, or until the seafood is fully cooked and the mussels have opened.
- Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
Notes
Serve with crusty bread or over rice. Store leftovers in an airtight container for 2-3 days.
