- 1 lb ground turkey or chicken
- 1 onion, diced
- 3 cloves garlic, minced
- 1 can (28 oz) crushed tomatoes
- 4 cups chicken or vegetable broth
- 1 tsp Italian seasoning
- Salt and pepper to taste
- 8 oz lasagna noodles, broken into pieces
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- Fresh basil leaves for garnish
Instructions
- Heat a large pot over medium heat. Brown the ground turkey or chicken until no pink remains.
- Add the diced onion and minced garlic. Cook until the onion is soft.
- Stir in the crushed tomatoes, broth, Italian seasoning, salt, and pepper.
- Bring the mixture to a boil. Reduce heat and simmer for 15 minutes.
- Add the broken lasagna noodles. Cook 10–12 minutes until the noodles are tender.
- Stir in the ricotta and half of the mozzarella. Heat until the mixture is melted and creamy.
- Serve hot. Top with the remaining mozzarella and fresh basil.
Notes
For a deeper tomato flavor, let the soup simmer an extra 10 minutes. Adjust seasonings to taste.
