Description

A warm and hearty soup that tastes like lasagna in spoonable form, featuring lean ground turkey, tomatoes, broken lasagna noodles, and creamy ricotta.


Ingredients

  • 1 lb ground turkey or chicken
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 1 can (28 oz) crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 8 oz lasagna noodles, broken into pieces
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • Fresh basil leaves for garnish

Instructions

  1. Heat a large pot over medium heat. Brown the ground turkey or chicken until no pink remains.
  2. Add the diced onion and minced garlic. Cook until the onion is soft.
  3. Stir in the crushed tomatoes, broth, Italian seasoning, salt, and pepper.
  4. Bring the mixture to a boil. Reduce heat and simmer for 15 minutes.
  5. Add the broken lasagna noodles. Cook 10–12 minutes until the noodles are tender.
  6. Stir in the ricotta and half of the mozzarella. Heat until the mixture is melted and creamy.
  7. Serve hot. Top with the remaining mozzarella and fresh basil.

Notes

For a deeper tomato flavor, let the soup simmer an extra 10 minutes. Adjust seasonings to taste.
