Description

Delicious homemade chicken quesadillas filled with salsa chicken, creamy refried beans, and melted cheese, perfect for any occasion.


Ingredients

  • 2 cups cooked salsa chicken
  • 1 can refried beans
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 8 small tortillas
  • Cooking spray or oil for frying
  • Sour cream and salsa for serving (optional)

Instructions

  1. Heat a skillet over medium heat and lightly grease it with cooking spray or oil.
  2. Spread a layer of refried beans on one side of each tortilla.
  3. Top half of each tortilla with salsa chicken and shredded cheese.
  4. Fold the tortillas over to form a half-moon shape.
  5. Place the quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown and the cheese is melted.
  6. Remove from the skillet and cut into wedges.
  7. Serve hot with sour cream and salsa on the side.

Notes
