- 2 cups cooked salsa chicken
- 1 can refried beans
- 2 cups shredded cheese (cheddar or Mexican blend)
- 8 small tortillas
- Cooking spray or oil for frying
- Sour cream and salsa for serving (optional)
Instructions
- Heat a skillet over medium heat and lightly grease it with cooking spray or oil.
- Spread a layer of refried beans on one side of each tortilla.
- Top half of each tortilla with salsa chicken and shredded cheese.
- Fold the tortillas over to form a half-moon shape.
- Place the quesadillas in the skillet, cooking for about 3-4 minutes on each side until golden brown and the cheese is melted.
- Remove from the skillet and cut into wedges.
- Serve hot with sour cream and salsa on the side.
Notes
To achieve a crispy texture, make sure your skillet is hot enough before adding the quesadillas. You can customize the fillings to your liking.
