Description

A warm and comforting soup combining cheese ravioli, savory Italian sausage, and bright tomatoes, perfect for a weeknight meal.


Ingredients

  • 1 package cheese ravioli
  • 1 pound Italian sausage, casings removed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 6 cups chicken broth
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups spinach or kale
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for serving

Instructions

  1. Heat a large pot over medium heat. Add the Italian sausage and brown it, breaking it up, until cooked through.
  2. Add the diced onion and minced garlic. Sauté until the onion is translucent.
  3. Pour in the chicken broth and the diced tomatoes. Bring the mixture to a boil.
  4. Add the ravioli and cook according to the package instructions, usually about 4 to 5 minutes.
  5. Stir in the spinach or kale and the Italian seasoning. Cook until the greens are wilted.
  6. Taste and season with salt and pepper.
  7. Serve hot, topped with grated Parmesan cheese.

Notes

Allow the soup to cool before storing. Reheat gently on the stove and add fresh ravioli for best texture.
