- 1 package cheese ravioli
- 1 pound Italian sausage, casings removed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 6 cups chicken broth
- 1 can diced tomatoes (14.5 oz)
- 2 cups spinach or kale
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for serving
Instructions
- Heat a large pot over medium heat. Add the Italian sausage and brown it, breaking it up, until cooked through.
- Add the diced onion and minced garlic. Sauté until the onion is translucent.
- Pour in the chicken broth and the diced tomatoes. Bring the mixture to a boil.
- Add the ravioli and cook according to the package instructions, usually about 4 to 5 minutes.
- Stir in the spinach or kale and the Italian seasoning. Cook until the greens are wilted.
- Taste and season with salt and pepper.
- Serve hot, topped with grated Parmesan cheese.
Notes
Allow the soup to cool before storing. Reheat gently on the stove and add fresh ravioli for best texture.
