A comforting and flavorful dish combining honey, BBQ sauce, chicken, and rice, perfect for busy weeknights.


Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup BBQ sauce
  • 1/4 cup honey
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1/2 tsp smoked paprika
  • Salt and pepper to taste
  • 1 cup mixed vegetables (optional)
  • Chopped green onions for garnish

Instructions

  1. Season the chicken thighs with garlic powder, onion powder, smoked paprika, salt, and pepper.
  2. Heat a skillet over medium heat and sear the chicken for 3–4 minutes per side until golden brown. Remove and set aside.
  3. In a bowl, mix the BBQ sauce, honey, and minced garlic.
  4. In the same pan, toast the uncooked rice for 1–2 minutes.
  5. Add the chicken broth and half of the sauce mixture. Stir to combine.
  6. Return the chicken to the pan, pouring the remaining sauce over the top.
  7. Cover and simmer on low heat for 15 minutes.
  8. Add the mixed vegetables, cover, and cook for 5 more minutes or until the rice is tender and the chicken is cooked through.
  9. Let sit for 5 minutes. Garnish with chopped green onions and serve hot.

Notes

For extra flavor, marinate the chicken in the BBQ sauce and honey mixture for a few hours before cooking. You can use brown rice instead of long-grain rice; just adjust the cooking time as brown rice takes longer to cook. Adding chopped bell peppers or peas to the mixed vegetables will enhance the dish’s flavor and texture.
