Description

A comforting and flavorful dish combining tender pork, fresh vegetables, and a savory curry sauce, perfect for family dinners.

Ingredients

Scale
  • 1 lb pork shoulder, cut into chunks
  • 2 tablespoons vegetable oil
  • 1 onion, chopped
  • 2 carrots, sliced
  • 1 potato, diced
  • 2 cups water
  • 1 package Japanese curry roux
  • Salt and pepper to taste
  • Cooked rice for serving

Instructions

  1. In a large pot, heat the vegetable oil over medium heat.
  2. Add the chopped onion and sauté until it becomes translucent.
  3. Add the pork chunks and cook until browned evenly.
  4. Toss in the sliced carrots and diced potatoes, stirring to combine.
  5. Pour in the water and bring the mixture to a boil.
  6. Reduce the heat and let it simmer for about 20 minutes until the vegetables are tender.
  7. Break the curry roux into pieces and stir it into the pot until fully dissolved.
  8. Simmer for an additional 10 minutes, adjusting seasoning with salt and pepper.
  9. Serve the warm curry over cooked rice.

Notes

For best results, let the pork brown nicely for extra flavor. Avoid overcooking the vegetables; they should be tender but not mushy.
