Description

A creamy, low-carb twist on the classic cheeseburger, this soup is comfort in a bowl.


Ingredients

Scale
  • 1 lb ground beef
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • 1 cup cauliflower, chopped
  • 1 tsp mustard
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat a large pot over medium heat. Add the ground beef and brown it, breaking it into pieces.
  2. Add the diced onion and minced garlic. Cook until the onion is translucent.
  3. Stir in the beef broth, chopped cauliflower, and mustard. Bring to a boil.
  4. Reduce heat and simmer until the cauliflower is tender, about 10–12 minutes.
  5. Pour in the heavy cream. Add the shredded cheddar cheese and stir until the cheese melts and the soup becomes creamy.
  6. Season with salt and pepper to taste.
  7. Serve hot and garnish with chopped green onions.

Notes

Store in a sealed container for 3–4 days in the refrigerator. Can freeze for up to 2 months.
