A creamy, low-carb twist on the classic cheeseburger, this soup is comfort in a bowl.
Ingredients

- 1 lb ground beef
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups beef broth
- 1 cup heavy cream
- 1 cup shredded cheddar cheese
- 1 cup cauliflower, chopped
- 1 tsp mustard
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat a large pot over medium heat. Add the ground beef and brown it, breaking it into pieces.
- Add the diced onion and minced garlic. Cook until the onion is translucent.
- Stir in the beef broth, chopped cauliflower, and mustard. Bring to a boil.
- Reduce heat and simmer until the cauliflower is tender, about 10–12 minutes.
- Pour in the heavy cream. Add the shredded cheddar cheese and stir until the cheese melts and the soup becomes creamy.
- Season with salt and pepper to taste.
- Serve hot and garnish with chopped green onions.
Notes
Store in a sealed container for 3–4 days in the refrigerator. Can freeze for up to 2 months.
