- 4 chicken breasts
- 4 medium potatoes, diced
- 2 cups broccoli florets
- 4 cloves garlic, minced
- Juice of 2 lemons
- 1/4 cup olive oil
- Salt and pepper to taste
- 1 teaspoon dried oregano (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and oregano.
- Add the chicken breasts to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes, or up to 2 hours for more flavor.
- On a sheet pan, spread out the diced potatoes and broccoli florets.
- Place the marinated chicken on top of the vegetables.
- Drizzle any remaining marinade over the entire pan.
- Bake for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
- Serve hot and enjoy!
Notes
For a twist, add other vegetables like carrots or bell peppers or use balsamic vinegar for the marinade.
