Description

A delightful meal that is easy to prepare, packed with flavor, and provides a healthy balance of protein and vegetables.


Ingredients

Scale
  • 4 chicken breasts
  • 4 medium potatoes, diced
  • 2 cups broccoli florets
  • 4 cloves garlic, minced
  • Juice of 2 lemons
  • 1/4 cup olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, mix olive oil, minced garlic, lemon juice, salt, pepper, and oregano.
  3. Add the chicken breasts to the bowl and coat them well with the marinade. Let it sit for at least 30 minutes, or up to 2 hours for more flavor.
  4. On a sheet pan, spread out the diced potatoes and broccoli florets.
  5. Place the marinated chicken on top of the vegetables.
  6. Drizzle any remaining marinade over the entire pan.
  7. Bake for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
  8. Serve hot and enjoy!

Notes

For a twist, add other vegetables like carrots or bell peppers or use balsamic vinegar for the marinade.
