Description

A warm, filling dish featuring creamy beans and smoky sausage, perfect for family dinners and weeknight meals.


Ingredients

  • Dried red beans
  • Smoked sausage or andouille sausage
  • Onion, diced
  • Green bell pepper, diced
  • Celery, diced
  • Garlic, minced
  • Creole seasoning
  • Cayenne pepper (optional)
  • Bay leaves
  • Chicken or vegetable broth
  • Cooked white rice
  • Green onions, chopped
  • Fresh parsley, chopped

Instructions

  1. Soak the dried red beans overnight in cold water. Rinse and drain before cooking.
  2. Heat a large pot over medium heat. Add a little oil if needed. Sauté the diced onion, green bell pepper, and celery until they soften.
  3. Add minced garlic and sliced smoked sausage or andouille sausage. Cook until the sausage browns and the vegetables are tender.
  4. Stir in Creole seasoning, a pinch of cayenne if you like heat, and bay leaves. Add the soaked red beans to the pot.
  5. Pour in enough chicken or vegetable broth to cover the beans. Bring to a boil. Lower the heat and simmer gently for about two hours, or until the beans are tender and the flavors meld.
  6. For a creamier texture, use a spoon to mash some beans against the side of the pot. Stir to combine. Remove bay leaves before serving.
  7. Serve the beans over hot cooked white rice. Garnish with chopped green onions and fresh parsley.

Notes

This recipe can be made ahead of time and frozen for longer storage. Use low-sodium broth to control the salt level.
