Description

Ingredients

  • 2 1/2 cups all-purpose flour (310g)
  • 1 cup unsalted butter, room temperature (226g)
  • 1 cup granulated sugar (200g)
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • Gel food coloring (pink, red, or desired colors)
  • Optional: 1/2 teaspoon almond extract

Instructions

  1. Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a large bowl, beat together the butter and sugar on medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl.
  3. Add the egg and vanilla (and almond extract if using), beating just until combined.
  4. In a separate bowl, whisk together the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the wet mixture in two batches, mixing on low speed until a soft dough forms. Avoid overmixing.
  6. Divide the dough in half (or thirds for more colors). Tint one part pink, one part red, leaving one part plain. Knead gently until the color is even.
  7. Roll each color into small logs, twist them together, and flatten into a rough rectangle. Fold once or twice, then gently roll out to a thickness of 1/4 inch.
  8. Dip a heart-shaped cutter in flour and cut out cookies. Place on the prepared baking sheets about 1 inch apart. Chill the dough for 10 minutes if it becomes sticky.
  9. Bake for 8-10 minutes, until the edges are just starting to turn golden and the centers look set.
  10. Let the cookies cool on the pan for 2 minutes before transferring them to a wire rack to cool completely.

Ensure your butter is at room temperature for best texture. Avoid overmixing the dough once the flour is added to keep cookies tender.
