- 1 cup unsalted butter, room temperature (226g)
- 1 cup granulated sugar (200g)
- 1 large egg, room temperature
- 2 teaspoons vanilla extract
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- Gel food coloring (pink, red, or desired colors)
- Optional: 1/2 teaspoon almond extract
Instructions
- Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
- In a large bowl, beat together the butter and sugar on medium speed until light and fluffy, about 2 minutes. Scrape down the sides of the bowl.
- Add the egg and vanilla (and almond extract if using), beating just until combined.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture in two batches, mixing on low speed until a soft dough forms. Avoid overmixing.
- Divide the dough in half (or thirds for more colors). Tint one part pink, one part red, leaving one part plain. Knead gently until the color is even.
- Roll each color into small logs, twist them together, and flatten into a rough rectangle. Fold once or twice, then gently roll out to a thickness of 1/4 inch.
- Dip a heart-shaped cutter in flour and cut out cookies. Place on the prepared baking sheets about 1 inch apart. Chill the dough for 10 minutes if it becomes sticky.
- Bake for 8-10 minutes, until the edges are just starting to turn golden and the centers look set.
- Let the cookies cool on the pan for 2 minutes before transferring them to a wire rack to cool completely.

Ensure your butter is at room temperature for best texture. Avoid overmixing the dough once the flour is added to keep cookies tender.
