- 2 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup sun-dried tomatoes, sliced
- 1 cup heavy cream
- 1 cup chicken broth
- 2 cups fresh spinach
- 1 teaspoon Italian seasoning
- Grated Parmesan cheese, for serving
- Fresh basil, for garnish (optional)
Instructions
- Season the chicken breasts with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook for about 6-7 minutes on each side until browned and cooked through. Remove the chicken from the skillet and set aside.
- In the same skillet, add the minced garlic and cook for 1 minute until fragrant.
- Stir in the sun-dried tomatoes, heavy cream, chicken broth, and Italian seasoning. Bring the mixture to a simmer.
- Add the fresh spinach and stir until wilted.
- Return the chicken to the skillet and let it simmer in the sauce for a couple of minutes.
- Serve hot, topped with grated Parmesan cheese and fresh basil if desired.
Notes
Marinate the chicken in Italian dressing for extra flavor. Use fresh spinach for the best texture. Add red pepper flakes for a bit of spice.
