A delightful and comforting dish packed with creamy, cheesy chicken goodness, perfect for family meals or potlucks.


Ingredients

  • 4½ cups chopped cooked chicken
  • 4 oz cream cheese (room temperature)
  • 1 cup cottage cheese
  • ½ cup sour cream
  • 1 (10.5 oz) can unsalted cream of chicken soup
  • ¼ tsp garlic powder
  • ¼ tsp dried onion powder
  • 1 sleeve Ritz crackers (crushed)
  • 5 Tbsp butter (melted)

Instructions

  1. Preheat your oven to 350ºF. Lightly spray a 9×9-inch baking dish with cooking spray and set it aside.
  2. In a large bowl, combine the chopped chicken, cream cheese, cottage cheese, sour cream, garlic powder, onion powder, and cream of chicken soup. Mix well and spread this mixture evenly into the prepared baking pan.
  3. In another bowl, combine the crushed Ritz crackers with melted butter. Sprinkle this cracker mixture over the chicken mixture in the pan.
  4. Bake uncovered in the preheated oven for 30 to 40 minutes, or until the top is golden brown and bubbly.

Notes

Use leftover or rotisserie chicken for convenience. For added crunch, consider mixing in chopped nuts or breadcrumbs. Adding vegetables like broccoli or spinach can enhance nutrition.
