Ingredients

  • 4 cups vegetable broth
  • 3 tablespoons miso paste
  • 1 tablespoon soy sauce
  • 1 tablespoon sesame oil
  • 200g mushrooms (shiitake or button), sliced
  • 1 tablespoon teriyaki sauce
  • 2 green onions, chopped
  • 1 teaspoon grated ginger
  • 1 garlic clove, minced
  • Optional toppings: tofu, seaweed, chili flakes

Instructions

  1. Cook the udon noodles according to package instructions, then drain and set aside.
  2. In a large pot, heat sesame oil over medium heat. Add garlic and ginger, and sauté until fragrant.
  3. Add sliced mushrooms and cook until tender.
  4. Pour in vegetable broth and bring to a simmer. Stir in the miso paste and soy sauce until dissolved.
  5. Add the cooked udon noodles and teriyaki sauce. Stir and heat through.
  6. Serve hot, garnished with chopped green onions and optional toppings.
