Description

A delightful blend of juicy apples, shredded carrots, and crunchy walnuts for a nutritious and tasty muffin.


Ingredients

  • 1 cup all-purpose flour
  • 1 cup whole wheat flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup packed brown sugar
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 cup shredded carrots
  • 1 apple, grated
  • 1/2 cup raisins
  • 1/2 cup chopped walnuts
  • 1/2 cup shredded coconut

Instructions

  1. Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
  3. In another bowl, whisk the granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
  4. Stir in the shredded carrots, grated apple, raisins, walnuts, and coconut into the wet mixture.
  5. Add the wet ingredients to the dry ingredients and mix until just combined.
  6. Divide the batter evenly among the muffin cups.
  7. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.

Notes

For a gluten-free version, use a gluten-free flour blend. Can be frozen for up to 3 months.
