- 1 cup all-purpose flour
- 1 cup whole wheat flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup vegetable oil
- 2 large eggs
- 1 cup shredded carrots
- 1 apple, grated
- 1/2 cup raisins
- 1/2 cup chopped walnuts
- 1/2 cup shredded coconut
Instructions
- Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners.
- In a large bowl, mix together the all-purpose flour, whole wheat flour, baking powder, baking soda, ground cinnamon, and salt.
- In another bowl, whisk the granulated sugar, brown sugar, vegetable oil, and eggs until smooth.
- Stir in the shredded carrots, grated apple, raisins, walnuts, and coconut into the wet mixture.
- Add the wet ingredients to the dry ingredients and mix until just combined.
- Divide the batter evenly among the muffin cups.
- Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let cool for a few minutes in the pan before transferring to a wire rack to cool completely.
Notes
For a gluten-free version, use a gluten-free flour blend. Can be frozen for up to 3 months.
