- 1 lb shrimp, peeled and deveined
- 1 cup bell peppers, chopped
- 1 cup onion, chopped
- 1 cup celery, chopped
- 4 cloves garlic, minced
- 1 can diced tomatoes
- 2 cups rice
- 4 cups chicken broth
- 2 tsp Cajun seasoning
- Salt and pepper to taste
- 2 tbsp olive oil
- Green onions, chopped (for garnish)
Instructions
- In a large skillet, heat olive oil over medium heat. Add the onion, bell peppers, and celery, and sauté until soft.
- Add garlic and shrimp, cooking until shrimp is pink.
- Stir in diced tomatoes, chicken broth, Cajun seasoning, salt, and pepper.
- Bring to a boil, then add rice.
- Reduce heat, cover, and simmer for about 20 minutes, or until rice is cooked.
- Serve hot, garnished with green onions.
Notes
Adjust Cajun seasoning to fit your spice preference. Make sure to peel and devein the shrimp for a cleaner taste.
