Description

An easy and comforting chicken and rice casserole that requires minimal prep and cooks in a single dish, perfect for busy days.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup long-grain white rice
  • 1 can cream of chicken soup
  • 1 can cream of mushroom soup
  • 2 cups chicken broth
  • 1 onion, chopped
  • 1 teaspoon garlic powder
  • Salt and pepper, to taste
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cooked chicken, rice, cream of chicken soup, cream of mushroom soup, chicken broth, onion, garlic powder, salt, and pepper.
  3. Pour the mixture into a greased casserole dish and spread it evenly.
  4. Cover the dish tightly with foil.
  5. Bake for 1 hour without peeking.
  6. After 1 hour, remove the foil, sprinkle cheese on top if using, and bake for an additional 10-15 minutes until the cheese is melted and bubbly.

Notes

Use leftover rotisserie chicken for even quicker prep time. Feel free to add vegetables like peas or broccoli for extra nutrition.
