Description

A delicious and hearty meal perfect for busy weeknights, combining protein, pasta, and vegetables in a single pot.


Ingredients

  • 1 pound ground turkey
  • 1 cup orzo pasta
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can diced tomatoes
  • 4 cups chicken broth
  • 1 cup spinach, chopped
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat.
  2. Add ground turkey and cook until browned.
  3. Stir in onion and garlic, cooking until softened.
  4. Add diced tomatoes, chicken broth, orzo, Italian seasoning, salt, and pepper.
  5. Bring to a boil, then reduce heat and simmer until orzo is cooked, about 10 minutes.
  6. Stir in spinach until wilted.
  7. Serve warm.

Notes

For more flavor, use homemade chicken broth. Feel free to add other vegetables or substitute ground turkey with ground beef or chicken.
