Description

A delightful side dish that transforms a humble onion into a gourmet experience with rich flavor and tender texture.


Ingredients

  • 1 large (15 ounce) sweet onion, peeled and ends trimmed off
  • 1 tablespoon vegan butter
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon salt (plus more to taste when serving each layer)
  • Optional additional seasonings: 1/4 teaspoon garlic powder, 1/4 teaspoon Old Bay seasoning
  • Optional garnish: finely diced parsley leaves

Instructions

  1. Use a small melon baller to scoop out the top center portion of the onion, about 1/3 of the way down, making a well.
  2. Place the onion on a sheet of aluminum foil and add the vegan butter into the well.
  3. Mix the Cajun seasoning with the olive oil and pour it over the butter into the well. Allow the mixture to drip down the sides.
  4. Season with salt and any additional seasonings you prefer.
  5. Seal the onion tightly in the aluminum foil. Place it in a small baking dish or cast iron skillet to catch any drips.
  6. Bake in a preheated oven until the onion is fork-tender and slightly caramelized. If needed, reseal the foil and continue baking.
  7. Turn the oven to broil. Open the foil, drizzle more melted butter or olive oil, and add a pinch of salt. Broil for 5-10 minutes, keeping a close eye to avoid burning.
  8. Once done, peel away the outer layers and enjoy each soft, flavorful inner layer with a sprinkle of salt. Pour any juices from the foil over the onion when serving for added flavor.

Notes

Onion Boil is best served fresh, but can be stored in an airtight container in the fridge for 3-4 days.
