A delightful roasted onion dish that’s sweet, savory, and easy to make, perfect for any meal.

- 1 large (15 ounce) sweet onion, peeled and ends trimmed off
- 1 tablespoon vegan butter
- 1 tablespoon extra virgin olive oil
- 1 teaspoon cajun seasoning
- ¼ teaspoon salt (plus more to taste when serving each layer)
- Optional: ¼ teaspoon garlic powder
- Optional: ¼ teaspoon old bay seasoning
- Optional garnish: finely diced parsley leaves
Instructions
- Preheat your oven to 375 degrees F.
- Use a small melon baller to scoop out the top center of the onion, about ⅓ of the way down, to create a well.
- Place the onion on a sheet of aluminum foil and add the butter into the well.
- Mix the olive oil with the seasonings and pour into the well, allowing it to drip down the sides.
- Season the onion with salt and any additional seasonings you prefer.
- Tightly seal the onion in the foil and place it in a baking dish or cast iron skillet.
- Roast on the center rack of the oven for 1 hour.
- After 1 hour, check if the onion is fork-tender and jiggles in the center. If not, reseal it and roast for an additional 10 minutes.
- (Optional) To broil: Turn the oven to broil, open the foil, drizzle more butter or olive oil, and add a pinch of salt. Broil for 5-10 minutes until golden brown.
- To serve: Peel away each layer of the onion and enjoy with extra salt if desired. Pour the juices from the foil over the onion for extra flavor.
Notes
You can scoop a good well in the center for better seasoning absorption. Adjust seasoning amounts to your taste.
