Instructions

  1. Mix Dry Ingredients:

  2. Combine Wet Ingredients:
    In a separate bowl, beat the egg, then add milk, vanilla extract, and melted butter. Stir until smooth.
  3. Create the Batter:
    Pour wet mixture into dry ingredients and mix gently. Do not overmix—batter should be slightly lumpy.
  4. Fold in the Strawberries:
    Gently fold diced strawberries into the batter using a spatula.
  5. Cook the Pancakes:
    Heat a non-stick skillet over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter per pancake onto the skillet. Cook until bubbles form (2–3 mins), flip, and cook 1–2 mins more.
  6. Serve and Enjoy:

Notes

For dairy-free: Use plant milk and coconut oil.

For vegan: Replace egg with 1 tbsp ground flaxseed + 3 tbsp water (let sit 10 mins).

For gluten-free: Use a 1:1 gluten-free flour blend with xanthan gum.
