Description

A warm, comforting bowl of soup that blends tangy tomatoes, cheesy tortellini, and fresh basil, perfect for a quick, satisfying meal.


Ingredients

  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) crushed tomatoes
  • 1 package (9 oz) refrigerated tortellini
  • 1 cup spinach
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat. Add the diced onion. Sauté until translucent.
  2. Add the minced garlic. Cook for one more minute.
  3. Pour in the vegetable broth and crushed tomatoes. Bring to a simmer.
  4. Add the tortellini. Cook according to package instructions until al dente.
  5. Stir in the spinach. Cook until wilted.
  6. Remove the pot from the heat. Stir in the grated Parmesan cheese.
  7. Taste and season with salt and pepper.
  8. Serve hot. Garnish each bowl with fresh basil.

Notes

For a richer soup, add a splash of cream or a pat of butter. You can also add cooked chicken or sausage for a heartier meal.
