- 2 tablespoons olive oil
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 can (14.5 oz) crushed tomatoes
- 1 package (9 oz) refrigerated tortellini
- 1 cup spinach
- 1/2 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Heat the olive oil in a large pot over medium heat. Add the diced onion. Sauté until translucent.
- Add the minced garlic. Cook for one more minute.
- Pour in the vegetable broth and crushed tomatoes. Bring to a simmer.
- Add the tortellini. Cook according to package instructions until al dente.
- Stir in the spinach. Cook until wilted.
- Remove the pot from the heat. Stir in the grated Parmesan cheese.
- Taste and season with salt and pepper.
- Serve hot. Garnish each bowl with fresh basil.
Notes
For a richer soup, add a splash of cream or a pat of butter. You can also add cooked chicken or sausage for a heartier meal.
