Description

This pink gelatin recipe combines gelatin, fruit puree, and vitamin C for a light dessert. Naturally colored with strawberries or raspberries, it’s a protein-rich, low-calorie treat.


Ingredients

Scale

1 ½ tbsp grass-fed unflavored gelatin

¼ cup cool water (for blooming)

1 ½ cups strawberry or raspberry puree

1 tbsp fresh lemon juice

2 tbsp honey or monk fruit syrup

½ cup hot water (not boiling)

¼ cup coconut milk (optional, for creamy texture)

Garnish: mint, edible flowers, or sliced berries


Instructions

  1. Bloom gelatin in cool water for 2 minutes.
  2. Blend strawberries, lemon juice, and honey until smooth.
  3. Stir bloomed gelatin into hot water until clear.
  4. Combine gelatin mixture with fruit puree (and coconut milk if creamy).
  5. Pour into molds or cups and refrigerate 2–3 hours until set.
  6. Garnish before serving.

Notes

Don’t boil water, heat gently for best protein retention.
