Ingredients

- 8 oz pasta of choice
- 1 cup beet juice or blended cooked beets
- 1/2 cup heavy cream or plant-based cream
- 1/4 cup grated Parmesan cheese (optional)
- Salt to taste
- Pepper to taste
- Fresh basil for garnish
Instructions
- Cook the pasta according to package instructions in salted water. Drain and set aside.
- In a skillet, combine the beet juice and heavy cream over medium heat and bring to a simmer.
- Add cheese, if using, and stir until melted.
- Season with salt and pepper.
- Toss the cooked pasta in the beet sauce until well coated.
- Serve garnished with fresh basil.
Notes
For a vegan version, use plant-based cream and skip the cheese. You can adjust the creaminess by adding more or less heavy cream.
