Description

A fun and colorful dish made with creamy beet sauce and pasta, perfect for any meal.


Ingredients

  • 8 oz pasta of choice
  • 1 cup beet juice or blended cooked beets
  • 1/2 cup heavy cream or plant-based cream
  • 1/4 cup grated Parmesan cheese (optional)
  • Salt to taste
  • Pepper to taste
  • Fresh basil for garnish

Instructions

  1. Cook the pasta according to package instructions in salted water. Drain and set aside.
  2. In a skillet, combine the beet juice and heavy cream over medium heat and bring to a simmer.
  3. Add cheese, if using, and stir until melted.
  4. Season with salt and pepper.
  5. Toss the cooked pasta in the beet sauce until well coated.
  6. Serve garnished with fresh basil.

Notes

For a vegan version, use plant-based cream and skip the cheese. You can adjust the creaminess by adding more or less heavy cream.
