Ingredients

- 1 cup almond flour
- 2 cups powdered sugar
- 3 large egg whites
- 1/2 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 teaspoon pistachio extract
- Green food coloring
- 1/2 cup pistachios, finely chopped (for garnish)
- Buttercream or ganache (for filling)
Instructions
- Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
- In a bowl, sift almond flour and powdered sugar together.
- In another bowl, whisk egg whites until frothy. Gradually add granulated sugar until stiff peaks form.
- Mix in vanilla and pistachio extracts, and add a few drops of green food coloring to achieve the desired color.
- Gently fold in the almond flour mixture into the meringue until combined.
- Pipe small circles onto the prepared baking sheets. Tap the trays to remove air bubbles and let them sit for 30-60 minutes until a skin forms.
- Bake for 15-18 minutes. Allow to cool before filling with buttercream or ganache.
- Garnish with finely chopped pistachios.
Notes
Store in an airtight container; they last up to 5 days at room temperature. Can freeze for up to 3 months.
