Description

Delicious and beautifully vibrant pistachio macarons with a chewy center and crisp outside, perfect for any occasion.


Ingredients

  • 1 cup almond flour
  • 2 cups powdered sugar
  • 3 large egg whites
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon pistachio extract
  • Green food coloring
  • 1/2 cup pistachios, finely chopped (for garnish)
  • Buttercream or ganache (for filling)

Instructions

  1. Preheat your oven to 300°F (150°C). Line baking sheets with parchment paper.
  2. In a bowl, sift almond flour and powdered sugar together.
  3. In another bowl, whisk egg whites until frothy. Gradually add granulated sugar until stiff peaks form.
  4. Mix in vanilla and pistachio extracts, and add a few drops of green food coloring to achieve the desired color.
  5. Gently fold in the almond flour mixture into the meringue until combined.
  6. Pipe small circles onto the prepared baking sheets. Tap the trays to remove air bubbles and let them sit for 30-60 minutes until a skin forms.
  7. Bake for 15-18 minutes. Allow to cool before filling with buttercream or ganache.
  8. Garnish with finely chopped pistachios.

Notes

Store in an airtight container; they last up to 5 days at room temperature. Can freeze for up to 3 months.
