- 1 pound shrimp, peeled and deveined
- 1 pound mussels, cleaned
- 1 pound clams, cleaned
- 1 pound fish fillets (like salmon or cod)
- 3 cloves garlic, minced
- 1 onion, chopped
- 1 cup cherry tomatoes, halved
- 1 cup vegetable broth
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the cherry tomatoes and cook for a few minutes until they start to soften.
- Pour in the vegetable broth. Bring the mixture to a simmer.
- Add the mussels and clams to the pot. Cover and cook for about 5 minutes, or until the shells open up.
- Once the shellfish is cooked, add the shrimp and fish fillets. Cook for an additional 5-7 minutes until the seafood is fully cooked and opaque.
- Stir in the lemon juice, salt, and pepper to taste.
- Remove from heat and garnish with fresh parsley before serving.
Notes
Serve with crusty bread and lemon wedges for dipping.
