Description

Deliciously stuffed potatoes filled with shrimp and crawfish in a creamy Cajun cheese sauce, perfect for a meal or appetizer.


Ingredients

  • 4 large russet potatoes
  • 1 pound shrimp, peeled and deveined
  • 1 pound crawfish tails
  • 1 cup creamy Cajun cheese sauce
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the russet potatoes with a fork. Bake them in the preheated oven for about 45-60 minutes, until tender.
  3. While the potatoes are baking, heat the olive oil in a skillet over medium heat. Add the shrimp and crawfish, seasoning with salt and pepper. Cook until shrimp are pink and cooked through, about 5-7 minutes.
  4. In a bowl, mix the cooked seafood with the creamy Cajun cheese sauce.
  5. Once the potatoes are done, remove them from the oven and let cool slightly. Cut them in half and scoop out a portion of the insides, creating a well.
  6. Fill the potato halves with the seafood and cheese mixture.
  7. Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until heated through.
  8. Garnish with chopped green onions before serving. Enjoy!

Notes

For a crunchy topping, sprinkle breadcrumbs before baking. Feel free to add diced bell peppers or use different cheeses.
