Deliciously stuffed potatoes filled with shrimp and crawfish in a creamy Cajun cheese sauce, perfect for a meal or appetizer.

- 4 large russet potatoes
- 1 pound shrimp, peeled and deveined
- 1 pound crawfish tails
- 1 cup creamy Cajun cheese sauce
- 2 tablespoons olive oil
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the russet potatoes with a fork. Bake them in the preheated oven for about 45-60 minutes, until tender.
- While the potatoes are baking, heat the olive oil in a skillet over medium heat. Add the shrimp and crawfish, seasoning with salt and pepper. Cook until shrimp are pink and cooked through, about 5-7 minutes.
- In a bowl, mix the cooked seafood with the creamy Cajun cheese sauce.
- Once the potatoes are done, remove them from the oven and let cool slightly. Cut them in half and scoop out a portion of the insides, creating a well.
- Fill the potato halves with the seafood and cheese mixture.
- Return the stuffed potatoes to the oven and bake for an additional 15-20 minutes until heated through.
- Garnish with chopped green onions before serving. Enjoy!
Notes
For a crunchy topping, sprinkle breadcrumbs before baking. Feel free to add diced bell peppers or use different cheeses.
