Ingredients

  • 4 cups vegetable broth or water
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp smoked paprika
  • 1 bay leaf
  • Optional: diced ham or bacon for added flavor

Instructions

  1. Rinse and sort the black eyed peas, removing any debris.
  2. In a slow cooker, combine the black eyed peas, vegetable broth or water, chopped onion, minced garlic, salt, black pepper, smoked paprika, and the bay leaf.
  3. If using, add diced ham or bacon for extra flavor.
  4. Cover the slow cooker and cook on low for 6-8 hours or until the peas are tender.
  5. Once cooked, remove and discard the bay leaf, and serve warm.

Notes

Soaking black eyed peas is optional; adjusting the seasoning can enhance the flavor to your preference.
