- 4 cups vegetable broth or water
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp smoked paprika
- 1 bay leaf
- Optional: diced ham or bacon for added flavor
Instructions
- Rinse and sort the black eyed peas, removing any debris.
- In a slow cooker, combine the black eyed peas, vegetable broth or water, chopped onion, minced garlic, salt, black pepper, smoked paprika, and the bay leaf.
- If using, add diced ham or bacon for extra flavor.
- Cover the slow cooker and cook on low for 6-8 hours or until the peas are tender.
- Once cooked, remove and discard the bay leaf, and serve warm.
Notes
Soaking black eyed peas is optional; adjusting the seasoning can enhance the flavor to your preference.
