Description

Delightful and buttery cookies with a sweet jam center and a sprinkle of powdered sugar, perfect for sharing during holidays or special occasions.


Ingredients

  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup powdered sugar
  • 1 large egg yolk
  • 1 teaspoon vanilla extract
  • ½ teaspoon salt
  • 1 teaspoon lemon zest
  • ½ cup fruit jam (such as raspberry or apricot)
  • Extra powdered sugar for dusting

Instructions

  1. Cream together the softened butter, granulated sugar, and powdered sugar until light and fluffy.
  2. Add the egg yolk, vanilla extract, lemon zest, and salt; mix until combined.
  3. Gradually add the flour, mixing until just incorporated.
  4. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour.
  5. Preheat the oven to 350°F (175°C).
  6. Roll out the chilled dough on a floured surface to about ¼ inch thickness.
  7. Use cookie cutters to cut out shapes, using a smaller cutter to create holes in half of the cookies for the jam filling.
  8. Place the cookies on a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes until lightly golden.
  10. Allow the cookies to cool completely on a wire rack.
  11. Spread a thin layer of jam on the solid cookie halves and top with the cookies that have holes.
  12. Dust the tops with powdered sugar before serving.

Notes

Ensure butter is at room temperature for easy mixing. Chill the dough for easier rolling and cutting. Don’t skip the powdered sugar for decoration.
