Instructions
- Preheat the oven to 350°F and line a large baking sheet with parchment paper.
- In a stand mixer with a paddle attachment, cream the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg white and vanilla extract, and mix for about 30 seconds to fully incorporate.
- Gradually add the flour, baking soda, baking powder, and salt, mixing until the flour disappears.
- Use a small cookie scooper to portion equally sized dough balls onto the baking sheet.
- Bake the cookies for 8 minutes. Let them rest on the baking sheet for 5 to 10 minutes before transferring to a cooling rack.
- For the frosting, cream the softened butter until light and fluffy.
- Add the powdered sugar, vanilla extract, and cream. Whip until smooth and fluffy.
- Mix in the pink gel food coloring until evenly combined.
- Frost each cooled cookie and decorate with Valentine’s Day sprinkles.
