Ingredients

  • 1/2 teaspoon cayenne pepper
  • 1 cup diced tomatoes
  • 1/4 cup chicken broth
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat vegetable oil in a large skillet over medium heat.
  2. Add the chopped onion and bell pepper, and cook until softened, about 5 minutes.
  3. Stir in the minced garlic and cook for an additional minute.
  4. Add the shrimp and cook until they turn pink, about 3-4 minutes.
  5. Mix in the Cajun seasoning, smoked paprika, and cayenne pepper, followed by the diced tomatoes and chicken broth.
  6. Simmer for about 5-7 minutes, allowing the flavors to meld together.
  7. Season with salt and pepper to taste.
  8. Garnish with chopped green onions before serving.

For a creamier version, add heavy cream or coconut milk during the simmering step.
