Description

Delightful muffins combining fresh strawberries and creamy cream cheese, perfect for breakfast, snacks, or dessert.


Ingredients

  • 1 cup fresh strawberries, chopped
  • 1 cup all-purpose flour
  • 1/2 cup sugar
  • 1/2 cup cream cheese, softened
  • 1/2 cup butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a mixing bowl, cream together the butter, sugar, and cream cheese until smooth.
  3. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. In another bowl, mix the flour, baking powder, baking soda, and salt.

  7. Divide the batter among the muffin cups, filling each about 3/4 full.

Notes

For extra texture, gently toss the chopped strawberries in a little flour before folding them into the batter.
