- 1/4 cup sugar
- 3/4 cup water
- 1/2 teaspoon vanilla extract
- Fresh strawberries (hulled)
- Cornstarch (for dusting)
Instructions
- In a mixing bowl, combine the glutinous rice flour, sugar, and water. Stir until smooth.
- Microwave the mixture for 1 minute, then stir. Repeat this process for a total of 3-4 minutes, until the dough is thick and sticky.
- Dust your hands and a flat surface with cornstarch. Take a portion of the mochi dough and flatten it into a round shape.
- Place a strawberry in the center and wrap the dough around it, sealing it well.
- Repeat this step until all the strawberries are encased in mochi.
- Dust the finished mochi with more cornstarch to prevent sticking.
