Description

A delightful Japanese treat combining chewy mochi and fresh strawberries, perfect for gatherings or a sweet surprise after meals.

Ingredients

Scale
  • 1 cup glutinous rice flour
  • 1/4 cup sugar
  • 3/4 cup water
  • 1/2 teaspoon vanilla extract
  • Fresh strawberries (hulled)
  • Cornstarch (for dusting)

Instructions

  1. In a mixing bowl, combine the glutinous rice flour, sugar, and water. Stir until smooth.
  2. Microwave the mixture for 1 minute, then stir. Repeat this process for a total of 3-4 minutes, until the dough is thick and sticky.
  3. Dust your hands and a flat surface with cornstarch. Take a portion of the mochi dough and flatten it into a round shape.
  4. Place a strawberry in the center and wrap the dough around it, sealing it well.
  5. Repeat this step until all the strawberries are encased in mochi.
  6. Dust the finished mochi with more cornstarch to prevent sticking.
  7. Serve and enjoy your homemade Strawberry Mochi!

Notes

For best results, use fresh, ripe strawberries and ensure the mochi dough is thick and sticky but not overly wet. Dust generously with cornstarch to prevent sticking.
