Description

A delicious and healthy chicken bowl combining corn, black beans, avocado, and more, perfect for lunch or dinner.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup corn (canned or frozen)
  • 1 cup cooked rice or quinoa
  • 1 cup black beans, drained and rinsed
  • 1 cup diced tomatoes
  • 1 avocado, diced
  • 1/4 cup chopped cilantro
  • 2 tablespoons lime juice
  • 1 teaspoon chili powder
  • Salt and pepper to taste

Instructions

  1. In a large bowl, mix together the shredded chicken, corn, cooked rice or quinoa, black beans, diced tomatoes, and diced avocado.
  2. Add cilantro, lime juice, chili powder, salt, and pepper.
  3. Gently toss to combine all ingredients.
  4. Serve immediately, or divide into meal prep containers for later.
