Ingredients

- 2 cups cooked chicken, shredded
- 1 cup corn (canned or frozen)
- 1 cup cooked rice or quinoa
- 1 cup black beans, drained and rinsed
- 1 cup diced tomatoes
- 1 avocado, diced
- 1/4 cup chopped cilantro
- 2 tablespoons lime juice
- 1 teaspoon chili powder
- Salt and pepper to taste
Instructions
- In a large bowl, mix together the shredded chicken, corn, cooked rice or quinoa, black beans, diced tomatoes, and diced avocado.
- Add cilantro, lime juice, chili powder, salt, and pepper.
- Gently toss to combine all ingredients.
- Serve immediately, or divide into meal prep containers for later.
