Description

Delightful strawberry-flavored cookies perfect for any occasion, especially Valentine’s Day.


Ingredients

  • 1 large egg
  • 1 tsp vanilla extract
  • 1/4 cup strawberry jam or preserves
  • 1 (3 oz) package strawberry gelatin (Jell-O)
  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional: pink or red food coloring

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream the softened butter and granulated sugar until fluffy.
  3. Add the egg and vanilla extract, mixing well.
  4. Stir in the strawberry jam and gelatin until combined.
  5. In a separate bowl, combine flour, baking soda, and salt.
  6. Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
  7. If desired, add food coloring to achieve your preferred shade of pink.
  8. Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
  9. Bake for 10-12 minutes or until the edges are lightly golden.
  10. Allow to cool on a wire rack before serving.
