- 1/4 cup strawberry jam or preserves
- 1 (3 oz) package strawberry gelatin (Jell-O)
- 1 1/2 cups all-purpose flour
- 1/2 tsp baking soda
- 1/4 tsp salt
- Optional: pink or red food coloring
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream the softened butter and granulated sugar until fluffy.
- Add the egg and vanilla extract, mixing well.
- Stir in the strawberry jam and gelatin until combined.
- In a separate bowl, combine flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until fully incorporated.
- If desired, add food coloring to achieve your preferred shade of pink.
- Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on a wire rack before serving.
Notes
Store cookies in an airtight container for 3-5 days at room temperature or refrigerate for up to a week. Can be frozen for up to three months.
