- 3/4 cup light brown sugar, packed
- 1/4 cup granulated sugar
- 2 teaspoons vanilla extract
- 2 cups all-purpose flour
- 2 teaspoons cornstarch

- 1/2 teaspoon kosher salt
- 1 cup semi-sweet chocolate chips
- 1/2 cup semi-sweet chocolate chunks
- 1/2 cup Red and White M&Ms
- 1/2 cup pink and white heart sprinkles
- 1 1/2 cups unsalted butter, softened (for frosting)
- 3 cups powdered sugar
- 4 tablespoons heavy whipping cream
- 2 teaspoons vanilla extract (for frosting)
- Pink gel food coloring (a few drops)
Instructions
- Preheat the oven to 350°F and prepare a heart-shaped cake pan with non-stick spray.
- In a stand mixer, beat the softened butter and both sugars together until light and fluffy. Add the vanilla and mix until combined.
- In a separate bowl, whisk the flour, cornstarch, baking soda, and salt together.
- Gradually add the dry mixture to the wet ingredients, mixing until just combined.
- Carefully fold in the chocolate chips, chunks, and M&Ms using a wooden spoon.
- Press the dough evenly into the prepared pan and sprinkle the top with heart sprinkles.
- Bake for 20-25 minutes or until the edges are lightly golden. Let it cool completely before frosting.
- For the frosting, beat the softened butter and powdered sugar together in a stand mixer until smooth and stiff peaks form. Add a few drops of pink food coloring and mix until you achieve the desired color.
- Place the frosting in a piping bag fitted with a star tip. Decorate the edges of the cooled cookie cake and add extra sprinkles. Optionally, write a message in the center with frosting.
Notes
Store the cookie cake in an airtight container at room temperature for up to three days or refrigerate for up to a week. Freezing individual slices is also an option for longer storage.
