Ingredients

  • 3/4 cup unsalted butter, softened
  • 3/4 cup light brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup semi-sweet chocolate chunks
  • 1/2 cup Red and White M&Ms
  • 1/2 cup pink and white heart sprinkles
  • 1 1/2 cups unsalted butter, softened (for frosting)
  • 3 cups powdered sugar
  • 4 tablespoons heavy whipping cream
  • 2 teaspoons vanilla extract (for frosting)
  • Pink gel food coloring (a few drops)

Instructions

  1. Preheat the oven to 350°F and prepare a heart-shaped cake pan with non-stick spray.
  2. In a stand mixer, beat the softened butter and both sugars together until light and fluffy. Add the vanilla and mix until combined.
  3. In a separate bowl, whisk the flour, cornstarch, baking soda, and salt together.
  4. Gradually add the dry mixture to the wet ingredients, mixing until just combined.
  5. Carefully fold in the chocolate chips, chunks, and M&Ms using a wooden spoon.
  6. Press the dough evenly into the prepared pan and sprinkle the top with heart sprinkles.
  7. Bake for 20-25 minutes or until the edges are lightly golden. Let it cool completely before frosting.
  8. For the frosting, beat the softened butter and powdered sugar together in a stand mixer until smooth and stiff peaks form. Add a few drops of pink food coloring and mix until you achieve the desired color.
  9. Place the frosting in a piping bag fitted with a star tip. Decorate the edges of the cooled cookie cake and add extra sprinkles. Optionally, write a message in the center with frosting.

Notes

Store the cookie cake in an airtight container at room temperature for up to three days or refrigerate for up to a week. Freezing individual slices is also an option for longer storage.
