Description

Delightful swirl cookies that add color and sweetness to your celebrations, perfect for any occasion.


Ingredients

Scale
  • 2 cups flour (plus possibly a few more tablespoons)
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 2/3 cup unsifted powdered sugar
  • 1/4 cup granulated sugar
  • 2 1/2 sticks unsalted butter (cut in chunks)
  • 1 tsp vanilla
  • 1/2 tsp food coloring of your choice (and/or 1/2 tsp of any desired extra extracts)
  • 1 1/2 cup holiday sprinkles

Instructions

  1. In a stand mixer bowl, combine flour, baking powder, salt, and both types of sugar. Mix on medium until blended.
  2. Gradually add the butter pieces and continue mixing.
  3. Add the vanilla extract and mix until the dough forms a ball.
  4. Divide the dough in half.
  5. Color one half with food coloring and any extra extracts. Mix until evenly colored.
  6. Roll out each portion between two sheets of wax paper to about 11 x 9 inches and 1/4 inch thick.
  7. Chill the rolled dough on a cookie sheet for at least 1 hour.
  8. Uncover the dough and brush the uncolored portion with water using a pastry brush.
  9. Carefully flip the colored dough onto the vanilla dough, pressing edges lightly to seal.
  10. Trim the edges for even lines, then roll the dough into a jelly-roll style swirl.
  11. Roll the dough log in holiday sprinkles, wrap in plastic, and chill for a few hours or freeze for up to three months.
  12. When ready to bake, slice the dough into 1/4 inch slices and place on parchment-lined baking sheets.
  13. Bake in a preheated 350-degree oven for 15 to 17 minutes or until the edges turn golden brown.
  14. Let them rest on the baking sheet for about 5 minutes before transferring to a cooling rack.

Notes

Chill the dough for better handling and avoid squishing the swirls. Experiment with different colors and extracts for unique flavors.
