Description

A creamy, rich vegan mousse with peanut butter and chocolate ganache, perfect for satisfying your sweet tooth while keeping things plant-based.


Ingredients

Scale
  • 350 grams silken tofu
  • 34 tbsp smooth peanut butter (to taste)
  • 34 tbsp agave syrup (or maple syrup/powdered sugar for sweetness, to taste)
  • 1 tsp vanilla paste or extract
  • 1 pinch salt
  • 100 grams 70% dark chocolate (chips or broken pieces)
  • 400g tin full fat coconut milk

Instructions

  1. In a blender, combine the silken tofu, peanut butter, agave syrup, vanilla extract, and a pinch of salt. Blend until smooth. Taste and adjust sweetness or flavor as desired.
  2. Spoon the mixture into ramekins or jars. Cover and place them in the refrigerator while you prepare the ganache.
  3. Melt the dark chocolate using a microwave or a double boiler. Mix in the creamy part of the coconut milk.
  4. Pour the ganache over the chilled peanut butter mousse. Return to the refrigerator and let it set for 1 hour. Serve and enjoy!
