Delightful vegan sweet rolls filled with strawberries and raspberries, perfect for breakfast or a snack.

- 115g dairy-free butter
- 400ml dairy-free milk (room temperature)
- 50g caster sugar
- 1 pack active dry yeast (approx 7g)
- 480g plain flour (plus extra for dusting)
- Pink food gel
- 100g fresh or frozen raspberries
- 50g caster sugar
- 1 tablespoon water
- 2 tablespoons cornflour
- 130g strawberry or raspberry jam
- 50g chopped fresh strawberries
- 60g dairy-free butter
- 40g dairy-free cream cheese
- 150g icing sugar
- 1 teaspoon vanilla extract
- Dairy-free milk (if needed)
- 2 tablespoons freeze-dried strawberries or freeze-dried raspberries
- Fresh strawberries
Instructions
- Melt the dairy-free butter in a bowl. Let it cool slightly, then add the dairy-free milk and 50g of caster sugar.
- Sprinkle the active dry yeast on top and let it sit for 5-10 minutes until bubbly.
- Gradually mix in the plain flour until a dough forms. Knead on a floured surface for 5-7 minutes.
- Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour until doubled in size.
- In a small pan, combine raspberries, 50g sugar, water, and cornflour. Heat until thickened, then cool.
- Roll out the dough into a rectangle, spread the jam evenly, and top with the raspberry mixture and chopped strawberries.
- Tightly roll the dough and slice into pieces. Place in a greased baking dish.
- Cover the rolls and let them rise for another 30 minutes.
- Preheat the oven to 180°C (350°F) and bake for 20-25 minutes until golden brown.
- Prepare icing with dairy-free butter, cream cheese, icing sugar, vanilla, and milk if needed, and drizzle over the warm rolls.
Notes
Store leftovers in an airtight container for up to 2 days at room temperature or in the fridge for up to a week. Freeze for up to a month.
