Description

Delightful vegan sweet rolls filled with strawberries and raspberries, perfect for breakfast or a snack.


Ingredients

  • 115g dairy-free butter
  • 400ml dairy-free milk (room temperature)
  • 50g caster sugar
  • 1 pack active dry yeast (approx 7g)
  • 480g plain flour (plus extra for dusting)
  • Pink food gel
  • 100g fresh or frozen raspberries
  • 50g caster sugar
  • 1 tablespoon water
  • 2 tablespoons cornflour
  • 130g strawberry or raspberry jam
  • 50g chopped fresh strawberries
  • 60g dairy-free butter
  • 40g dairy-free cream cheese
  • 150g icing sugar
  • 1 teaspoon vanilla extract
  • Dairy-free milk (if needed)
  • 2 tablespoons freeze-dried strawberries or freeze-dried raspberries
  • Fresh strawberries

Instructions

  1. Melt the dairy-free butter in a bowl. Let it cool slightly, then add the dairy-free milk and 50g of caster sugar.
  2. Sprinkle the active dry yeast on top and let it sit for 5-10 minutes until bubbly.
  3. Gradually mix in the plain flour until a dough forms. Knead on a floured surface for 5-7 minutes.
  4. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour until doubled in size.
  5. In a small pan, combine raspberries, 50g sugar, water, and cornflour. Heat until thickened, then cool.
  6. Roll out the dough into a rectangle, spread the jam evenly, and top with the raspberry mixture and chopped strawberries.
  7. Tightly roll the dough and slice into pieces. Place in a greased baking dish.
  8. Cover the rolls and let them rise for another 30 minutes.
  9. Preheat the oven to 180°C (350°F) and bake for 20-25 minutes until golden brown.
  10. Prepare icing with dairy-free butter, cream cheese, icing sugar, vanilla, and milk if needed, and drizzle over the warm rolls.

Notes

Store leftovers in an airtight container for up to 2 days at room temperature or in the fridge for up to a week. Freeze for up to a month.
