Description

Ingredients

  • 4 large onions
  • 1/4 cup olive oil
  • 2 tablespoons balsamic vinegar
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • Fresh herbs (like rosemary or thyme, optional)
  • Water for boiling

Instructions

  1. Fill a large pot with water and bring it to a boil.
  2. Peel the onions and cut off the ends.
  3. In a bowl, mix together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
  4. Once the water is boiling, add the onions and boil for about 15-20 minutes until they are tender.
  5. Remove the onions and place them on a baking tray.
  6. Brush the onion mixture over the boiled onions.
  7. Optionally, sprinkle with fresh herbs.
  8. Roast the onions in the oven at 400°F (200°C) for about 10-15 minutes until they are slightly caramelized.
  9. Serve warm as a side dish.

Notes

For a richer flavor, boil onions longer until very tender before roasting. Don’t skip fresh herbs for added fragrance.
