- 4 large onions
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 2 teaspoons garlic powder
- 1 teaspoon salt
- 1 teaspoon pepper
- Fresh herbs (like rosemary or thyme, optional)
- Water for boiling
Instructions
- Fill a large pot with water and bring it to a boil.
- Peel the onions and cut off the ends.
- In a bowl, mix together the olive oil, balsamic vinegar, garlic powder, salt, and pepper.
- Once the water is boiling, add the onions and boil for about 15-20 minutes until they are tender.
- Remove the onions and place them on a baking tray.
- Brush the onion mixture over the boiled onions.
- Optionally, sprinkle with fresh herbs.
- Roast the onions in the oven at 400°F (200°C) for about 10-15 minutes until they are slightly caramelized.
- Serve warm as a side dish.
Notes
For a richer flavor, boil onions longer until very tender before roasting. Don’t skip fresh herbs for added fragrance.
