Description

A warm and comforting dish combining tender chicken, creamy beans, and spicy green chiles, perfect for cold days.


Ingredients

  • 1 pound cooked chicken, shredded
  • 1 can (15 oz) white beans, drained and rinsed
  • 1 can (4 oz) diced green chiles
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1 cup heavy cream
  • Chopped cilantro for garnish

Instructions

  1. In a large pot, sauté onion and garlic until softened.
  2. Add the shredded chicken, white beans, green chiles, chicken broth, cumin, chili powder, paprika, salt, and pepper.
  3. Bring to a boil, then reduce heat and simmer for 20 minutes.
  4. Stir in the heavy cream and heat through.
  5. Serve hot, garnished with cilantro.

Notes

For extra flavor, try using homemade chicken broth. Add diced jalapeños or chili flakes for more heat. Use rotisserie chicken to save time.
