- 1 pound cooked chicken, shredded
- 1 can (15 oz) white beans, drained and rinsed
- 1 can (4 oz) diced green chiles
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1/2 teaspoon paprika
- Salt and pepper to taste
- 1 cup heavy cream
- Chopped cilantro for garnish
Instructions
- In a large pot, sauté onion and garlic until softened.
- Add the shredded chicken, white beans, green chiles, chicken broth, cumin, chili powder, paprika, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Stir in the heavy cream and heat through.
- Serve hot, garnished with cilantro.
Notes
For extra flavor, try using homemade chicken broth. Add diced jalapeños or chili flakes for more heat. Use rotisserie chicken to save time.
