Description

A comforting and hearty White Chicken Chili that is packed with flavor and healthy ingredients, ready in under 30 minutes.


Ingredients

  • 1 lb cooked chicken, shredded
  • 1 can white beans, drained and rinsed
  • 1 cup chicken broth
  • 1 cup corn, frozen or canned
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup heavy cream or Greek yogurt
  • Salt and pepper to taste
  • Optional toppings: cilantro, avocado, lime

Instructions

  1. In a large pot, sauté the diced onion and minced garlic over medium heat until softened.
  2. Add the shredded chicken, white beans, corn, chicken broth, cumin, and chili powder. Stir to combine.
  3. Bring the mixture to a simmer and cook for about 15 minutes, allowing the flavors to meld.
  4. Stir in the heavy cream (or Greek yogurt) and season with salt and pepper to taste.
  5. Serve hot and top with optional cilantro, avocado, or a squeeze of lime.

Notes

For added flavor, try roasting the garlic before adding it to the pot. If you like a bit of heat, add diced jalapeños or a pinch of cayenne pepper.
