- 1 lb cooked chicken, shredded
- 1 can white beans, drained and rinsed
- 1 cup chicken broth
- 1 cup corn, frozen or canned
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup heavy cream or Greek yogurt
- Salt and pepper to taste
- Optional toppings: cilantro, avocado, lime
Instructions
- In a large pot, sauté the diced onion and minced garlic over medium heat until softened.
- Add the shredded chicken, white beans, corn, chicken broth, cumin, and chili powder. Stir to combine.
- Bring the mixture to a simmer and cook for about 15 minutes, allowing the flavors to meld.
- Stir in the heavy cream (or Greek yogurt) and season with salt and pepper to taste.
- Serve hot and top with optional cilantro, avocado, or a squeeze of lime.
Notes
For added flavor, try roasting the garlic before adding it to the pot. If you like a bit of heat, add diced jalapeños or a pinch of cayenne pepper.
